The Saint, an Italian-inspired steakhouse from a veteran in the hospitality industry, will open Thursday on Gaston Avenue.

It is located in the old Two Sisters Catering in the Deep Ellum area, at the corner of Gaston and Cantegral. Two Sisters closed in December 2021 after more than three decades in business.

The restaurant is brought by Hooper Hospitality Concepts, led by CEO Andy Hooper. He has worked with MGM Resorts International as a general manager, and he served in the same role at Steven Starr’s Buddakan in New York City. He was also director of operations for Alicart Restaurant Group and for chef Daniel Boulud and Dinex Group. Hooper opened Locale and El Luchador in Las Vegas.

Jacob Williamson has been named culinary director and will source from on Texas farmers, ranchers and suppliers, such as Vertigrow in Waxahachie, Texas Fungus in Arlington, Mozzarella Company in Dallas, Wagyu X in Midlothian, Rosewood in Ennis, Honor Wagyu in McAllen and R-C Ranch in Houston, according to a press release.

A few menu highlights include the Maine lobster arancini, steak tartare, bluefin tuna crudo and vegetarian pappardelle bolognese. Texas Wagyu tomahawk chop, Texas Wagyu New York strip and a prime filet are a few of the beef options, but lamb shank, Texas quail, pan-seared diver scallops and sauteed branzino are also on the menu.

Desserts will be made in house, except for white chocolate cheesecake from J. Rae’s Dallas, located on West Lovers Lane.

Italian and Texas spirits are the focus of the cocktail menu, which includes 12 specialty drinks.

Inspired by a “saints and sinners” theme, Greg O’Neal of Philosophy Design created the design for the space. The firm is also responsible for designing Shinsei, Lovers Seafood, Harper’s and The Finch.
