With school planning happening all around, the last thing I can think about is what to put into a lunchbox. Here is what lunch looks like when I throw it in the box at 6 a.m.: trusty peanut butter and jelly, pretzels and a cheese stick. A great lunch, but no variety. Well, until now.

I scoured media to gather some new ideas. With newly acquired ammunition, lunchboxes in this house will be all but boring.

BLT Wrap

It is not a boring sandwich, and it’s easy for tiny hands to hold. A crowd favorite.

Hummus Sandwich

Yes siree bob. Hummus in between bread…with other veggie goodness. I love the added hot sauce in this recipe, but always leave it off for my tiny tot.

Chewy Picnic Bars

I rarely have time to cook, but I was able to coerce my daughter into helping me cook these tasty gems.  It was more of me stirring and sweating while she watched them cook in the oven. Nonetheless.

Tomato-Feta Open-Face

A splash of change in sandwich indifference; healthy, colorful, and delicious.

Ginger-Garlic Snap Peas

A side dish that has the perfect added crunch.

Quick Quiche Cups

Easy, peasy, breezy, and yummy.

Lemon Pepper Bagels

My favorite little lunch. I wasn’t sure if this would be kid-friendly until I served them at a family pool party a few weeks back. They devoured them.
