While sometimes called an agave Americana, the plant is also known as a century agave, although the name is a bit of misnomer. In reality, the agave blooms just once in its life, right before it dies, which can be anywhere from 10-30 years after the plant initially takes root. But seeing a mature century agave in full bloom is still a rarity, and something you can glimpse right now on Tavaros at San Leandro in Little Forest Hills.
