Violet Becker, 10, won the Great American SPAM Contest at the State Fair of Texas this past weekend for her “mac and cheese SPAMuffins”.

Her dad, Keith Becker, describes the concoction as “mac and cheese in muffin tins with caramelized SPAM on top.”

Violet, who lives in Lochwood and attends Hexter Elementary, won the same contest two years ago for “SPAM skewers with pickled cucumber fries”.

In this year’s recipe, she used eggs from her favorite hen, Roberta, and parsley from her herb garden. She got a $150 prize, and she gets to go to Nashville next month to compete with 26 other state-fair champs. The winner of that contest, which is judged by Hormel, gets $2,000.

“Just the oddity of SPAM makes it an interesting recipe contest, and it involves the state fair, so it’s a lot of fun,” he says.
