“We like to call ourselves glorified pantry chefs,” Omar Kasim, founder of PLOMO Quesadillas said. “We take really simple items like Doritos and mac and cheese, things that you would find in your pantry and we try to elevate them using our culinary techniques and skills to be able to provide a unique take on the quesadilla.”

Quesadilla lovers can stop by PLOMO’s for various cheesy eats. Foodies can find unique items such as the Vasquez, a Caribbean Jerked Chicken Quesadilla, and the El Padrino, a spicy steak quesadilla that features Spicy Nacho Doritos. In addition, people have the option to “Make it Dirty” by adding an additional layer of crispy cheese to cover the outer layer.

It doesn’t end at the quesadillas, customers can pair their meal with any side or dip item. From the Notorious Queso, Chorizo Mac & Cheese, Guacamole, Salsa, Churros Bites, and Elote there’s much to pick from.

The concept started as a side hustle in August of 2019 to help make ends meet. It was an additional way to create revenue after seeing the large consumption of quesadillas purchased at his first restaurant, Con Quesos

“I noticed that one of our top five selling items was the chicken quesadilla, it was the most simple item on our menu,” Kasim said. “We offered it mainly for children but it was a really sought after item.”

When you create a business you have to cater to the customers that support you, and they love quesadillas, he said.

At the time, Kasim used the back door of his Juice Bar on weekends to serve quesadillas as pickup for hungry customers. Once the pandemic hit, the grab-n-go cheesy goodness grew in popularity. From that moment, Kasim had a vision to close the juice bar in order to provide a full space for its customers. The result, over 1,000 quesadillas a night.

From its humble beginnings out of the back door of a Juice Bar in Fayetteville AR, Kasim said he is ready to take on the large market Dallas has to offer.

“If we can make it here you know, we can make it anywhere,” he said.

When Kasim decided to expand, his initial thought was to bring the quesadillas to Dallas.

It just felt right as many Arkansas razorbacks are either from Dallas when they move to college, or move from Arkansas to DFW post college, he said. However, Knox-Henderson wasn’t the initial neighborhood for PLOMO to land. Kasim originally intended to open the quesadilla bar in Deep Ellum, but when he discovered Knox Street Pub, a popular place amongst Razorback Alumni was right across the street, it was a sign.

Whether you’re coming back from the concerts or bars, it’s a place to meet and end your night over some great food, Kasim said.
