A prestigious ramen restaurant whose chef has served the likes of Bill Clinton and the Japanese prime minister is open on Greenville Avenue.

Hinodeya Ramen & Bar debuted Wednesday, about four months after owner Masao Kuribara announced that it would replace BBBop at 2023 Greenville Ave.

The eatery specializes in nontraditional dashi-style ramen made with fish stock — such as seaweed, bonito flakes and scallops — rather than tonkotsu broth made from pork stock. The noodles are also thicker, with whole wheat and a higher water content that adds springiness to the texture, CultureMap reported.

The signature ramen dish includes chashu pork, bamboo shoots, soft-cooked egg, green onion, nori, sesame seeds and scallop-and-pork oil. For a limited time this summer, Hinodeya will offer a cold dashi ramen with lemons, diced chicken and scallion, according to CultureMap.

The Greenville location is the eatery’s fourth in the United States and first outside California, according to Hinodeya’s website. However, the restaurant has a history that stretches 134 years in Japan. It’s owner, Kuribara, is a fourth-generation chef whose grandfather opened the fist Hinodeya in Japan in 1885 with only 15 seats. 

In Dallas, the eatery seats 60 at white oak tables and chairs. There is also a 450-square-foot patio with a fire pit surrounded by Japanese maples and bamboo.

Hinodeya Ramen & Bar will open for dinner Monday-Sunday. Lunch will be added soon.
