Though it was originally scheduled for a winter opening, Flock & Fresh is now looking forward to a May 2 debut in the Old Town Shopping Center.
The fast-casual chicken restaurant will be located at 5500 Greenville Ave., Suite 205 and will serve lunch and dinner. The concept is from Wan Kim, Smoothie King CEO and owner of Nuri Steakhouse on Cedar Springs Road and JOA Grill near Northwest Dallas.
Kim intends for the chicken at Flock and Fresh — grilled, fried, in a salad or on a sandwich — to be free of hormones and antibiotics and brined for 24 hours, according to a Dallas Morning News article.
“I think chicken is the best protein in this world,” Kim said to The Dallas Morning News. “I really think the world needs a different chicken place where choices matter. I think it has to be a little healthier.”
A full menu has not been released yet, but Flock & Fresh’s Instagram gives some hints. One post shows two salads: Flock House with hard-boiled egg, red bell peppers, corn, tomatoes, cucumbers and colby jack cheese, and Berry Fields with (as the name suggests) strawberries, blueberries, grapes and apples plus granola and feta. The salads can be topped with grilled or fried chicken or none at all. Dressings include yuzu citrus, avocado ranch, honey balsamic or spicy harissa.
Other photos show a fried chicken sandwich with “Flock spread,” pickles and bacon jam on a brioche bun, and chicken baskets paired with sauces and side salads.
