A fast-casual restaurant serving grilled and crispy chicken is expected to open in the Old Town Shopping Center near Greenville Avenue and Lovers Lane this winter.

It’s called Flock & Fresh, a concept from Wan Kim, Smoothie King CEO and owner of Nuri Steakhouse on Cedar Springs Road and JOA Grill near Northwest Dallas.

“I wanted to create something that reflects how people really live and eat today — something quick but thoughtful, light but still full of flavor,” Kim said in a press release. “It’s simple, honest food made to meet you where you are, for the days you want to indulge and the days you’re leaning into something lighter, all while using high-quality ingredients that cater to a variety of tastes.”

The menu is expected to include “simple, customizable and made-to-order items,” according to the press release. The chicken will be cage-free, without hormones or antibiotics and can arrive on your plate in tenders, in a sandwich or on a salad. Housemade sauces like curry ranch, “Flock Sauce,” cajun sauce and K-sauce, plus yuzu citrus and avocado ranch salad dressings, will also be on the menu. 

Aesthetically, Flock & Fresh is expected to be designed in a modern way with a “soft, feminine sensibility,” brought to life by Plan B Group, according to the press release. There will be “warm tones, curved walls and whimsical fixtures” inside and an open-air patio that includes greenery and custom murals.

Flock & Fresh will be located at 5500 Greenville Ave., Suite 205, (near where Blaze Pizza used to be) and will serve lunch and dinner.
