In response to the sad news of Rusty Taco founder Russell “Rusty” Fenton’s passing, last week fellow taco-slingers at Velvet Taco on Henderson Avenue created a special taco in his memory- a homemade corn tortilla, stuffed with roasted achiote pork, grilled pineapple, pickled red onion, queso fresco, avocado cream and topped with a lime wedge.
Velvet Taco normally features a unique off-menu taco every week, but the taco in Fenton’s memory set a new sales record. From the Velvet Taco Facebook page:
“Velvet Taco would like to thank everyone who helped support our “Rusty Taco” we sold over 900 tacos in one week setting a new record! We are proud to announce that because you helped us we are now able to donate $2,000 to the educational fund set up for Rusty’s daughters! Thank you for all the support.”
