Marugame Udon will debut in the former American Deli space in the Old Town Shopping Center, 5500 Greenville Ave. The eatery was supposed to open in early summer, but it was delayed because of the coronavirus pandemic.

The Tokyo-based concept is known for its handmade udon noodles, fresh tempura and katsu sandos prepared and assembled in a theatrical exhibition kitchen. The sandos include a cheeseburger with house-made slaw and traditionally prepared “bulldog sauce” and a Spam and cheese with pickles.

Char-grilled robata items include chicken meatballs, grilled steak with shiso salsa verde, Japanese BBQ pork belly and a vegetable skewer with maitake mushroom, shishito peppers and kumato tomatoes.

The restaurant features a double-sided line and will be takeout and pick-up friendly. It will also deliver via Uber Eats and DoorDash.
