If your first inclination is to order a beer with every Tex-Mex meal, think again. Most people don’t think about it, but there are some intriguing — and inexpensive — wines that complement enchiladas, fajitas, and the like.

“It doesn’t even take that much work to find something,” says Rich Liebman, a wine buyer for Goody Goody Liquors on lower Greenville. Just use the same sort of guidelines you’d use with any other type of meal”

That means, first and foremost, drink what you like. Second, try to pair lighter wines, like whites and rosés, with lighter foods and heavier wines, like reds, with heavier foods. Consider these examples:

• Calloway Chenin Blanc 1998 ($5). It’s difficult to find a good Chenin Blanc, especially at this price. But Calloway, which produces excellent inexpensive wines, has an award-winner here. It’s fruity but not too sweet, and goes well with any kind of enchilada. Serve it well chilled.

• Nobilo Sauvignon Blanc 1999 ($9). Serve this New Zealand white well chilled. It’s a deserving choice with shrimp or chicken fajitas as well as chile rellenos.

• Bogle Old Vine Zinfandel 1998 ($10). A sturdy red wine, full of deep flavors, that goes well with beef fajitas or any kind of robust chili dish.
