Texas Monthly reports a lot of hand-wringing about whether a restaurant should make its how tortillas in a recent post titled “Does a Great Taco Require a Handmade Tortilla?

For Tacos Mariachi owner Jesús Carmona, making tortillas in-house doesn’t make sense, the magazine reports. It comes down to consistency and labor. “You need to find the right person to make those tortillas,” he says. “It’s not easy to find that person.”

Well, that person could be you. True Texans make their own tortillas. Dotty Griffith is the author of 11 cookbooks, most about Texas-style cuisine. Her first was “Wild About Chili” and her latest is “The Ultimate Tortilla Press Cookbook,” 125 recipes for make-your-own tortillas. A native Texan, she once said, “Barbecue is the most American of foods; to hell with apple pie.”
