Pizza production will be handled by pizza chef Lee Huntzinger. Huntzinger is a World Pizza Champion known for his flavorful spins on old traditional favorites.

“Detroit-style pizzas might not look too different from the square Sicilians that we make at Zoli’s, but there are a few big changes that make them stand on their own,” Huntzinger said in a statement. “Detroits have a more prominent butter flavor due to the oil that lines the steel baking pans and the use of Wisconsin brick cheese, which has a higher butter fat content than traditional mozzarella. We also add white cheddar to the mix to give them even more flavor.”

Some of Thunderbird Pies’ offerings include the $22 Blind Pig, which is made with vodka sauce, Motor City sausage, caramelized onion, chili flakes and cherry peppers. A lighter choice is the Lafayette green with crispy eggplant, zucchini, roasted tomato, olives and pesto.

All the pies will be a 10-inch by 4-inch rectangle sliced into eight pieces in the fashion of Detroit pizza.

Thunderbird Pies will begin deliveries Monday exclusively via Uber Eats. Pizzas will also be available for pickup at Zoli’s Pizza, 14910 Midway Road in Addison.
