“Highland Park food with a trailer-park sensibility” is how pitmaster Will Fleischman describes the latest addition to Lower Greenville, Louie King BBQ.

The restaurant recently opened in the former Daddy Jack’s space at 1916 Greenville Ave., according to CultureMap. The masterminds behind the barbecue joint are Sameer Patel and Patrick Bruce, who also launched Feed Company and Leela’s Wine Bar + ABV.

Patel and Bruce persuaded Fleischman  —  Lockhart Smokehouse’s one-time pitmaster, TV competitor and cookbook author — to man the operation. Now he’s concocting oddities like rabbit sliders and Akuashi brisket.

“The model at Louie King is an old-school no-frills barbecue joint, no table service, where we cut the meat to order and throw it on a piece of butcher paper on a sheet tray,” he told the news outlet. “It’s a straightforward menu with traditional barbecue — but an experience unlike any other barbecue you’ve ever had.”
