Cheese curds are coming to lowest Greenville.

Haymaker, a restaurant and bar specializing in “regional comfort sandwiches,” could open on Greenville at Hudson in a week or so.

This is the second Haymaker location. The first opened about three years ago in Austin. Co-owner Brian Pacheco says he went to high school in Plano, and Lower Greenville was his teenage stomping grounds.

He and his partners also own Black Sheep Lodge in Austin.

The Austin location is known for its poutine, French fries served with brown gravy and cheese curds. These curds come from a small producer in Wisconsin. Authentic Wisconsin white cheddar curds, that’s the secret, Pacheco says. The Dallas menu will be similar to the Austin one, but Dallas also will offer the deep-fried cheese curds that Black Sheep Lodge is known for.

Haymaker has its own parking lot with 140 spaces. It will have about 40 draft beers and 90-100 cans and bottles.

Pacheco says he’s hired most of the restaurant’s staff, and he expects to receive a certificate of occupancy this week.
