Late at night along Greenville Avenue, hungry revelers demand sustenance — and fast. But the dough-meister behind the counter at Greenville Avenue Pizza Company manages to mesmerize the ravenous droves as he stretches, twists and tosses the dough, shaping it into the perfect pie before shoving it into the fire. “He entertains them, so they don’t mind waiting so much,” says co-owner Sammy Mandell of the pizza-maker known simply as “K”. The stunts are great, but it’s the premium ingredients and addicting seasonings that bring ’em back again and again, says partner Chris Cook. “You can check the fridge,” he says. Come in for pizza and ambiance but get even more — little perks include beer specials (buy a large pizza, get a $6 pitcher of Bud Light). There are also the oh-my-gosh good gooey garlic knots — fresh doughy rolls that you dip in alfredo or marinara sauce — and the Brutus salad — a Caesar salad with jalapeño-Caesar dressing topped with chopped peppers (Brutus Caesar, get it?) Weekdays, it stays open until 2 a.m., and 4 a.m. on the weekends, but Mandell says hours are flexible. “We’ll pretty much stay open until everyone out on Greenville has gone home.”
